Andy has been making Pinot Noir Carbonic Maceration since 2015 and every year it just keeps getting better. The goal is a red wine that behaves essentially like a white wine, with low tannins and phenolic grip, but with flavors of raspberry, rhubarb and strawberry on the palate. Pair it with nothing or pair it with nearly everything, but always try to give it a little chill before serving. \n\u003cbr\u003e\u003cbr\u003e\n\u003cb\u003eWinemaking:\u003c\/b\u003e Three different vineyards in the Willamette Valley in near equal parts, under carbonic maceration for 5 to 7 days, depending on flavor development in tank. Wine was pressed to taste and natively finished fermentation in stainless steel. 22ppm of SO2 was added post malolactic fermentation was completed. This wine, Pinot Gris, Direct Press Sur Lie, while wholly different from its inspiration, still strives to hit these same emotional places, but with some modern references thrown in for good measure. The wine is reminiscent of what Pinot Gris might taste like if grown in Jura, or a more high acid version of Coteaux de l'Ardèche. Unique, but immediately knowable. On the 11th vintage of this lovely little wine, we’ve switched things up a bit by adding one barrel of co-fermermented Grenache and Mourvèdre from the Umpqua Valley. This addition brings an ethereal quality to the wine that exists in the producers from the Ardeche and Catalonia that I tend to drink with my friends when we’re all together, chatting, snacking and spilling tea. As a side note, if you find yourself needing to open two bottles, add ¼ to ½ Direct Press Pinot Gris to this wine to increase the bright, citrus notes, which to me, always pair well with the summer sun. \n\n\u003cb\u003eWinemaking:\u003c\/b\u003e Direct-to-press Pinot Noir + direct-to-press co-fermented \/ co-pressed Grenache and Mourvedre.
