If you put together a salad of cherry Jolly Ranchers, winter chicories, Sunday hikes in a damp forest and a vinaigrette that's seasoned with a 50/50 mix of chalkboard and SweetTart dust, you'd have our Super Deluxe Pinot Noir. Bright enough to keep you coming back, stable enough to take home to your parents. Even if you are the parents.
Twenty-eight to forty days (depending on tank) of Carbonic Maceration on Pinot Noir from the Willamette Valley (with a tiny amount of Pinot Gris co-fermented), followed by a few days of “fouler le raisin”, otherwise known as foot treading. Wine was pressed directly into neutral barrels and aged for 12 months on original lees. 12ppm of SO2 prior to bottling. No fining or filtration.
