Since 2020 this wine has gone through fermentation entirely in a large concrete cube. In the past it has been moved to stainless steel post malolactic fermentation, but this year there was enough wine to let it stay in concrete the entire time up till bottling, which has been a goal for the last several vintages. Always a personal favorite of Andy’s, this wine is the ultimate raw seafood accompaniment; Bright, focused, textural and keeps you coming back for more.
