Organically grown Gamay Noir from the northern Willamette Valley.
Fermentation:
Whole cluster carbonic fermentation in stainless steel. Dug out and pressed back to stainless where the juice finished fermentation. Fermented on gross lees and never racked until bottling. NO SO2 used at any point.
