2018 Pinot Noir Pet Nat

In 2018 we hand bottled a small amount of three different Pet Nat's: Pinot Noir, direct press Pinot Gris and a skin contact Pinot Gris. These wines are all very long triage (four years) and have no added SO2 (sulfur). We learned a lot from this project and it's fairly likely we will not repeat it, so we encourage you to add these into your shipment before they are gone forever. 

The Pinot Noir was released in two different disgorgements, with the first being two years on lees and two years in bottle. For this release, the same wine is four years on lees prior to disgorgement and a year in bottle before release, with the original wine being bottled at 24 grams per liter sugar. Fans of true Champagne will be stunned by this wine's ability to hold bubble, as well as with its linear texture and laser-focused acidity. Serve with raw seafood, especially oysters on the half shell with apple cider vinaigrette.
