Fermentation

6 to 12 days (depending on tank) of whole cluster carbonic maceration. Drained off, dug out and pressed back to a combination of stainless tanks (75%) and foudre (25%) to go dry. Racked to stainless for bottling. No fining or filtration.

Our grapes are hand-harvested by a crew you can count on one hand.

Ingredients

The only things that go into Marigny wines are hand harvested grapes, ambient yeast, and time.

An untracable amount of sulfites are added, while bottling, to protect the wine as it moves from barrel to bottle

Storage Instructions

These wines are for enjoying but, inbetween enjoyings, they should be stored in a cellar like environment at around 55Β°

For varietals you enjoy chilled, toss them in the fridge for 30-45 minutes before you pop the top, but don't leave them in the fridge too long, over chilling can mute the flavor profile.
