Story:

This wine was originally conceived in 2020 after fermenting a parcel of chardonnay and a parcel of Sav Blanc individually that were from a single site in the Gales Creek area, which is right down the road from where most of our current sites are located. Post fermentation I found that, in the spirit of the Cheverny-styles of the Loire, the two varietals played really well together. This was born Fais Do Do, the creole word for a do si do, which also serves as a reference to remember to get the babies to bed beforehand. I think of this as what you might desire when Chardonnay feels too austere, but skin contact might feel too playful. A wonderful balance, whether at the table or on the dance floor.

Pairs:

Baked Whitefish with Beurre blanc, Roasted Veggies, Pound Cake 

Techniques:

Direct press to barrel for both the Chardonnay and the Sauvignon blanc. Elevage for 11 months in barrel and moved to stainless for 9 months before bottling. Bottle aged for 6 months before release 

Serving Temperature:

45 - 55° Fahrenheit 

Viticulture:

Farmed with one site organic Certified Organic by Oregon Tilth (Pinot Gris) and two sites farmed organic without certification (Sav Blanc and Chardonnay)
