In 2018 we hand bottled a small amount of three different Pet Nat's: Pinot Noir, direct press Pinot Gris and a skin contact Pinot Gris. These wines are all very long triage (four years) and have no added SO2 (sulfur). We learned a lot from this project and it's fairly likely we will not repeat it, so we encourage you to add these into your shipment before they are gone forever.
A portion of direct press Pinot Gris juice was added to a fermenting lot of Carbonic Pinot Gris and bottled with 24 grams per liter sugar to create 5 bar of pressure in bottle. The wine was then disgorged 4 years later and topped with 2021 direct press Pinot Gris. The result is firm yet floral, and utterly suited for a variety of curry, bo-samm, bouillabaisse or binging Yellowstone with a take out carton of General Tsos. And no, we would never @ you for that.
