Take everything that you love about our OG Carbonic Pinot Gris and turn it up a notch. A soft, yet tannic structure, the texture of something vaguely like river rocks, deep citrus notes (Blood Orange, anyone?) and a lasting finish reminiscent of the great skin contact wines of Friulli. These wines absolutely rule with things like Chinese takeout, BBQ ribs or fall charcuterie boards with oil cured mushrooms and a smoky blue cheese.
Grapes: Pinot Gris
Vinification: Two weeks of semi-carbonic maceration in stainless steel, pressed directly into French Oak (100% neutral). Full lees aging, racked to stainless steel two weeks before bottling with a small SO2 addition at racking.
